Uncollection

  • It's cold and wet here today. The perfect day for Noah to be home. We have had a wonderful day off, just puttsin' around the house, doing little chores here and there, but a fair amount of reading, knitting, sleeping, and just being family. Wonderful!
  • Had my first one on one of the summer this afternoon. One on Ones are the mentoring program that we have here. The counselors have One on Ones with their campers, they do something the camper wants to, and it gives the counselor time to really get to know the kids, see where they are coming from and just spend good "one on one" time with them. We also do that with the summer staff. This year, I get to hang out with the East Side Cook's Assistant. We had our first time today because I am gone all next week. We took a thermos full of hot Starbucks up to the library above the West Side Chapel and made our own coffee house for an hour. We will be doing that again! So perfect on a rainy, wet day.

  • Elliot has learned a new trick.

  • I mentioned I will be gone all next week. Tuesday morning, the boys and I are hitting the road. We will be going to my parents' house for the week, doing some shopping, hopefully picking some strawberries and making jam, and hanging out with some dear friends. I hate being away from Noah, I mean, come on, there is a reason I married him. But it being the first week of camp, he won't be around much anyway. I also realized that by us not being here, the poor man can sleep through the night for five straight nights. He is in desperate need of that!

  • All of my herbs have sprouted and are growing! Anybody know when you can start to eat them?
  • My gallon of flax seed oil came today.

  • We had smoothies for dinner...
About 3 or 4 cups of plain homemade yogurt

2 frozen bananas that were too brown for the camp kitchen to use, so I froze them about 3 months ago

About half a bag of frozen strawberries that I wish I had picked, but because I was hugely prego
last summer just bought from a roadside stand.

About half a bag of frozen blueberries, same story as above.

2 tablespoons flax seed oil. Flax seed is one of those super good oils for you that most of us don't get enough of. It's very good for your brain and arteries.

About 30 seconds worth of a squeeze on the local honey that came from the Amish store, to help with allergies.

Throw it all in the blender, or put it in there to start with. Blend until it's a smoothie.

Serve with sweet potato pancakes or whole wheat oat bread and more honey.
Super Sunday Supper!

  2. I got this flax seed oil from friend who knows of a co op downstate. You can get it at health food stores and you can get flax seed meal at the grocerry store, kinda of by the bread machine mixes. I use the flax seed meal in any baked goods. The oil you use when you make your own salad dressings, smoothies, etc. you just aren't suppose to cook with it because it will loose its good properties.

  3. OK, it's way too late and I'm way to hungry... I can't read your posts about food before bed.
I still can't believe all those strawberries! Yum.
