Uncollection

Well, some how we went from the beginning of July to the end of July in a blink.  Here's a little of how it went

  • We watched the Ticos lose to the Netherlands in a shoot out.  Sad.  But that didn't change the reception that the team got when they flew home the next week!  They drove the whole group around on a flatbed truck for 5 hours after they landed, just so people could see them.  And everwhere there are billboards thanking the team and the coaches. 

  •  We went on a short get away to a beach we hadn't been to yet.  Long story, but our neighbors were given two nights at a house just off the beach and invited us to join them.  What a blast! Best part?  Hands down, feeding the monkeys on our porch first thing in the morning!

  • I finally came up with a workable solution for shelves in our garage.  I even managed to maneuver the hardware store in Spanish with all the kids in tow! Oh and funny thing about those shelves.  Elliot opened the back of the 4Runner and all three boards fell out onto his little foot!  We were concerned that he might of actually broken something this time.  So we went off to the doctor the next day (this all happened the day before we went to the beach) and praise the Lord, it wasn't broken, just badly bruised!  He was told no trampoline or tree climbing for 5 days.  And now he's right as rain.

  • Noah made me a window shelve too!  Yes, we're into shelves here.

  • Elliot found a lizard and put a leash on him.  

  • The boys and our neighbor friend built a tepee.  Steph has been collecting used sheets to make a big one later on, but she let the boys paint one for the small tepee they built.  And I will say, their painting looks very cave drawingesk.

  • This week is teacher inservice at LCA.  Today the Bible teacher is talking with the rest of the staff about how Jesus taught.  Wednesday, Noah is going to be talking about discipleship, and Friday I will be sharing some practical ways a teacher can  be disciplining in their classroom every day.  This is a new concept for most of them.  Pray for us and for the staff.

Crockpot Mango Butter

Ok.  We are going to get back in the groove here with this blogging thing!  I have missed it. A lot.  But, well, life has taken over and, and, and, and....

So, let's start with something easy...a recipe.

It's mango season again folks!  Remember this mango pie recipe?  Last year I tried making mango sauce (like apple sauce) and mango juice and neither went over well enough to justify all the work involved.

This year, my mom was here because I decided surgery would be a fun thing, and she suggested mango butter, as in like apple butter.




We did a trial run in the crockpot and it went over so well, I bought 18 kilos of mangos on the way back from the beach and made some more, because the Northerner in me just won't believe that there is always fresh fruit here.  Must.Can.All.The.Fruit.

So here's the drill.
Enough ripe mangos, peeled and sliced to fill your crockpot
Cinnamon, nutmeg and vanilla to taste

Peel and cut mangos.  Run through the blender so you get rid of the stringiness.  Pour puree into crockpot with lid on.  Set to high until the puree starts to bubble.  Add in spices and leave the lid off.  Continue to stir.  Reduce for about 8-10 hours or until the desired consistency.  Ladle into hot jars and process in a water bath for 15 minutes.  Try to keep your family out of it.

Uchuvas

So yesterday we found these at the feria.



Aren't they cool looking?  They're called uchuvas here in Costa Rica. I had read about them before, but hadn't seen them since reading, and I was excited to find them. Apparently they are also called Inca Berries or Golden Berries. 

And let me just say they are super yummy!! Sorta tart and sweet with tiny seeds.  They have some of the same qualities of a cranberry, actually.  I might try adding them to some stuffing this Thanksgiving.



After some more research online, turns out these are a super food!  They are full of B vitamins, one of the most fibrous foods out there and they have about 2 grams of protein for an ounce of berries.  That a lot for a fruit!

Things You Can't Do in the North

Last weekend we went to Jacó with my mom (oh yeah, I forgot to tell you my mom is HERE!)  Anyway, we met up with a friend who had access to a surf board.

There are days when the thought of my kids being TCKs is hard.  There is a part of me that cries a little when my almost 5 year old asks me while watching The Snowman, "Mom, what are they doing with the snow?"  Being from The North, snow is in our DNA and here my kid doesn't understand the concept of making a snowball.  Sigh.

But then there are moments like this last weekend, when I realize they are getting such an amazing perspective on the world.  They will grow up knowing how to make a snowball, but also how to do things like speak Spanish, and Surf.  What?  Yeah, that ain't something you can do in the North.  Ok, well, technically, you can surf in Lake Michigan in November (No.Thank.You.) Anyway.

It was good for me to change my perspective a bit, again.  To see once more the gift that this life gives to my kids.  To see for a brief moment how God is placing my boys into a bigger world, preparing them for Something, for His plan, and it made me excited again to see what He is going to do with them.
