Rainy, Dreary, Drippy Day



For the fourth day in a row, we have had nothing but cold, clouds, and rain. And when you live in the woods, that means there is no light in the house at all.

And because of all this drippy, dreary, rainy fallness, tonight was soup night. Thanks to my sister in law Jenn for this receipe.

Cheesy Cheddar Chowder

4 c. water
5 potatoes, peeled & cubed
4 carrots, peeped & cut
some chopped onion
2 tsp. salt
1/2 tsp. pepper
1 bag frozen broccoli
1 c. (or more) frozen corn
1 stick butter
1/2 c. flour
3 c. milk
3 c. shredded cheddar cheese
3 c. ham, cubed
(* you can really add whatever veggies you want or have)
Combine water, salt, pepper, onion, potatoes & carrots. Bring water to boil until vegetables are soft. During last 5 minutes of boiling, add broccoli and corn. Cover pot.

In separate sauce pan, combine milk, flour, and butter until melted. Add cheese and stir to melt.
Add cheese mixture and ham to undrained vegetables. Heat, but don't boil. Makes a big pot and freeze well.
