This One is Just for You Rob

There was a big discussion on Facebook last night about homemade tortillas and my blog being censored by Moody Bible Institute.

Yes, it is true, Moody will sometimes block out the inappropriate photos of things like birthday cakes, tortillas and sledding from my blog.  I think it's hilarious.  I didn't realize I was so subversive to Bible School students.  I know this because one of the season staff guys from the fall (Hi Rob!) is a student there now, and he likes to check up on how my knitting is going, or what we are eating for dinner, or get advice on how to handle a baby who isn't sleeping through the night.

Ok, so that was just part of the discussion.  The other part had to do with homemade tortillas.  Rob wanted the recipe I use.  So, Rob, this one is just for you!



Homemade Flour Tortillas

3 cups all purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 1/4 warm water
2 tablespoons canola oil (or any other oil you might have, or lard, or shortening, or...)


Rob, I am going to assume you don't have a mixer at school, so just use a bowl and wooden spoon.  

Mix dry ingredients together, fold in oil, gradually stir in water.  Kneed until smooth.  Roll into a bit bigger than golf size balls.  Cover and let rest for 20 minutes.



Now, I have been blessed with a couple of different tortilla presses.  The one I used last night was a metal one from my friend Sarah, but you can use a rolling pin too.  Or a can of corn, or a baseball bat.  Roll out your tortillas on a floured surface.



Spray or brush a bit of oil on each side and lay them on a skillet or frying pan that is HOT.  The hotter the better.  Wait for it to start to blister on one side, then flip.


Serve with taco or fajita meat, or cheese, sour cream and salsa.

  2. hummmm...gluten free...do they make gluten free flour of some sort? Maybe soy flour? Or spelt?
